Ellie's North Carolina Sailing Holiday Slideshow + a Thai Shrimp Cakes Recipe
I created this slideshow using Photosnack, a free slideshow app. They have one to make flipbooks, too!
Thai Shrimp Cakes
via; Cooking Light
2/3 cup panko (Japanese breadcrumbs), divided
1/4 cup minced unsweetened dried coconut, divided
2 tablespoons minced green onions $
2 tablespoons finely chopped fresh cilantro
2 teaspoons fish sauce
2 teaspoons Sriracha (hot chile sauce)
1 1/2 teaspoons grated peeled fresh ginger
1 teaspoon lime juice
1 large egg, lightly beaten $
1 garlic clove, minced
8 ounces peeled and deveined shrimp, chopped
1 tablespoon olive oil $
1 lime, quartered
Preparation
1. Combine 1/3 cup panko, 2 tablespoons coconut, and next 8 ingredients in a large bowl. Add shrimp; stir just until combined. Using wet hands, shape mixture into 4 equal balls. Combine remaining panko and coconut in a shallow dish. Coat balls in panko mixture; press to form 4 (4-inch) patties.
2. Heat a large nonstick skillet over medium-high heat. Add oil; swirl to coat. Add patties; cook 4 minutes on each side or until desired degree of doneness. Serve with lime.

Emerald Isle and A Garden Update
The Girl comes home today; my have I missed her. I am certain that she has had a wonderful time. I would imagine that they have all run themselves so hard that they will need to sleep a ton once they arrive home.
They spent their last day on the Emerald Isle beach, from what I can tell.
And of course, here is a video to round out this part of the post:
I have spent much of the time cleaning, creating, etc. A very big chunk of it has been spent at school. It took me 3 days to set up my classroom in my new school and then I had 2 days of training. I will be meeting with my new team mates this afternoon. I had a lovely breakfast meeting with my dear friend and colleague Kassidy. She is moving from AHS to teaching online. Her's is an exciting and scary adventure, too.
But I have also been enjoying my time at home. I have prepped some old honeycomb for a project. I will share that with you soon. The garden has been pretty happy, but it also seems to be slowing down. For some reason, the beans seem to be stuck in a time warp.

Kind of Like "Titanic" - A Musical Soundtrack in My Head
Martine continues to publish photos from the North Carolina trip. I am thankful for that as I have an idea of what their trip is like. It has been a long time since I have gotten to do something like this.

I've been processing raw bee's wax to make some clean wax so that I can make lotion bars. I've made some dumb mistakes, but find the process very interesting. I will share those soon.

Back to Land - Checking Out Beaufort, NC
The sailing group has returned to land; they are having a bit of fun in Beaufort, NC.
They still seemed to like spending a bit of time on the boat.
The kids also found a bit of time to be silly. According to the Beaufort Facebook page, it won a "Coolest Little Town" award from a travel magazine.
Donny and Dianna are the hosts. Mark has known them since he was in high school.
