Sunday Breakfast, a New Tradition with Ethan in the Kitchen

Now that the construction season is winding down, Ethan has been able to come home for many weekend of late. He has gotten in the habit of making a nice Sunday breakfast for the family. He makes RioMuffins, a family recipe shared with him by one of the guys who drives a truck for the company Ethan works for. It is a strange recipe, but wickedly good, too. Larr is very excited when Ethan says he will make breakfast.
He begins by preparing the bacon by baking it at 400 degrees for about 20 minutes. Laying down a sheet of foil makes clean up pretty quick. Then he heats the pan and begins to toast the muffins. Timing is important here. Ethan spreads raspberry jelly on the bottom muffin and yellow mustard on the top muffin. He also has sunny side up eggs cooking in a hot frying pan. The egg is topped with short pieces of bacon and slices of cheddar cheese. This is topped with the muffin top with mustard. Then it is eaten quickly and with a plate directly underneath you.
This is messy yumminess, which means a lot coming from me who does not like eggs and is not overly fond of mustard.

This sounds intriguing. I see how the raspberry jam would work but the mustard is throwing me for a loop! I'll have to give it a go and report back:)! Love, N
